Borodinsky bread

A malted rye sourdough flavoured with coriander seeds, Borodinsky bread was, according to folklore, made on the eve of the Battle of Borodino just outside Moscow in 1812. I used Andrew Whitley’s version of the recipe from his book Bread Matters.

It’s a moist, dense-crumbed bread – lovely just with butter or some smoked salmon. I gave a loaf to our localĀ barbersĀ – I guess the quality of my next haircut will reveal whether they liked it or not!
